The Greatest Show on Earth

Caleb and I went to the Ringling Brothers & Barnum and Bailey Circus tonight and had an absolute blast. At the end, Caleb says, "Mom, that was better than the movies!" Quite a review coming from this little movie fanatic.

Camera addiction?

I have to say that today's pic may be evidence of a bit of a problem with cameras. Seven cameras, plus the one taking the picture? Yeah, that does not seem neccessary. Although I will say, 2 are antiques and two are vintage. And I had to get the new SLR because there were problems with my old one and I need a working SLR for my photo class. I'm not an addict, really. I can stop anytime I want to. Its more of a... collection. Yeah, thats it, a collection. Seriously though, I think I am going to display them when I get my new work space set up.

Classes started today... Intro to Crime Scene Tech, Intro to Forensic Science and Crime Scene Photo I. Looking forward to that last one the most. I was trying out my new Nikon today and it felt so good to be taking real pictures, with a real camera. Don't get me wrong, I love my DSLR. But there is just something about manipulating the camera settings to produce the picture, rather than letting the camera do all of the work.

Anyways, Chemistry starts tomorrow, on campus. Not real sure how I feel about that. But it is a requirement, so I will give it my best.

Angel Hair Pasta and Shrimp

Angel Hair Pasta and Shrimp

8 oz. angel hair pasta
1/4 cup olive oil
1 tsp. chopped garlic
1 lb. shrimp, peeled & de-veined
2 28 oz. cans diced tomatoes, any style
2 tbs. dried parsley
1 tbs. dried basil
1/2 cup white wine

1. Cook pasta according to package directions. Drain.
2. Heat olive oil over med. head. Add garlic and cook 2-3 minutes, until garlic is tender.
3. Add shrimp to oil & garlic. Cook 3-5 minutes on each side. Remove from pan and set aside.
4. Add tomatoes, basil, parsley and wine to pan. Cook, stirring occationally, until reduced by half, about 8 minutes.
5. Return shrimp and pasta to sauce and cook 2-3 minutes, until pasta and shrimp are brought back to temp.
6. Garnish with fresh parsley and grated parmesan cheese.
7. Enjoy!

Dinner and my newest project



I actually made dinner tonight, unfortunately unusual for me. Angel hair pasta with shrimp (recipe to follow). It was pretty good, if I do say so myself. I should really cook more, and I plan on it.

I'm also working on a new project, hopefully one that will prove lucrative. Todays pic-a-day is actually the work in progress of my washer necklaces. (Thanks to Little Birdie Secrets for the great idea!) They are really cute too, and easy.
Cute, huh?
Oh, and I finally saw Disney's A Christmas Carol. Good movie, stayed true to the original. All in all a good day. Here's to more to come.

Pic-a-Day 01/01/10

One reason I started this blog was because of a "resolution" I made to take at least one picture every day. The only requirement is that it cannot be a picture of my kid. I wanted a single place to keep these pictures online. Hence, Amanda 365. Here is the first installment of Pic-a-Day, 2010.
